Enter Natalia Cardenas, an Illinois mixologist and consultant, who helped the Ayalas hone, again, a more “travel friendly” beverage menu. To start, Wake ’N Bacon will feature two signature drinks. Borracha horchata, is made in the style of horchata de morro, an El Salvadorian-style horchata that uses the morro seed for a nuttier flavor. The other, ensalada de fruta, is also inspired by El Salvador, using Ketel One Peach, fresh orange blossom, a calamansi lime sour mix and peach syrup. It will also feature popping bubbles popular in boba teas — a finishing flourish that nods to Sarah’s Eastern Asia roots.
